Miller's Damsel Wheat Wafers 125g

A crunchy, wheaty wafer for cheese, hand-baked by Miller's at a family bakery in Ashbourne in Derbyshire that has been going for more than a hundred years. The Damsel wafers are the plainest crackers the bakery makes, and the ones to keep in the cupboard.

There are five ingredients: 92% stoneground wholemeal flour, corn oil, autolysed yeast, sea salt and a raising agent. The baker says the wheat is grown and milled in England. The wafers are hexagonal, thin and very crisp, with the nutty sweetness of wholemeal flour and a light salting, and they carry no flavour that would argue with a cheese.

That neutrality is the point. They suit a crumbly Lancashire, a mature cheddar such as Quicke's Mature Clothbound Cheddar, a soft goat's cheese or a blue, and they hold a slice of ham or a spoon of pickle without breaking. The Charcoal and Buttermilk wafers complete the set.

A 125g box. Contains gluten from wheat, and the bakery says its products are not suitable for nut allergy sufferers. Contains no animal products according to the ingredient list.
