Miller's Damsel Buttermilk Wafers 125g

A tangy, creamy wafer for cheese, hand-baked by Miller's at a family bakery in Ashbourne in Derbyshire that has been going for more than a hundred years. The baker describes it as made with buttermilk and butter churned in England.

The dough is wheat flour with 33% buttermilk, 16% butter and whole milk powder, plus autolysed yeast, salt, fermented wheat flour, a little sugar and a raising agent. The buttermilk gives it a slight sourness and the butter a short, rich crumb, so it eats like a cross between a water biscuit and a cheese biscuit, pale gold and hexagonal like the rest of the Damsel range.

It suits the cheeses of its own part of the world: a crumbly Cheshire, a Lancashire, or a mature cheddar such as Quicke's Mature Clothbound Cheddar. The richness also makes it a good base for smoked salmon with a little crème fraîche, or for potted shrimps. The Wheat wafer is the plainer, dairy-free alternative.

A 125g box. Contains gluten from wheat and milk, and the bakery says its products are not suitable for nut allergy sufferers. Vegetarian by ingredients.
