Miller's Damsel Charcoal Wafers 125g

A dark, crisp charcoal wafer for cheese, hand-baked by Miller's at a family bakery in Ashbourne in Derbyshire that has been going for more than a hundred years. The baker describes it simply as dark and crisp, made with stoneground flour grown and milled in England.

The dough is 89% stoneground wholemeal flour with corn oil, autolysed yeast, salt, malted barley flour, malt extract and a raising agent, coloured almost black with charcoal powder. The charcoal itself is tasteless; what you get is the nutty wholemeal of the plain Damsel wafer with a gentle malted sweetness from the barley, in a hexagonal wafer that snaps cleanly.

Charcoal crackers are traditionally served with cheese for the look as much as anything, and a white goat's cheese, a Brie or a slice of Wensleydale on a black wafer earns its place on a board. They also suit a strong cheddar and a spoon of Mrs Darlington's Real Ale Chutney. Mix them with the Wheat and Buttermilk wafers for three colours on one plate.

A 125g box. Contains gluten from wheat and barley, and the bakery says its products are not suitable for nut allergy sufferers. Contains no animal products according to the ingredient list.
