Quicke's Mature Clothbound Cheddar 150g

A clothbound cheddar matured for twelve to fifteen months, made by Quicke's at Home Farm, Newton St Cyres in Devon, from the milk of their own grass-fed cows. The cheese is bound in cloth and left to mature naturally, which lets it breathe and dry a little as it ages.

The maker's own description is a rich and buttery cheddar with real depth of flavour that builds as it reaches the back of the palate, running from brothy through grassy to caramel. It is made with pasteurised milk, Cornish sea salt, starter culture and rennet; the producer lists it as not suitable for vegetarians. Expect a firm, slightly crumbly paste and a long savoury finish rather than the sharp acidity of a factory mature.

This is a cheeseboard cheddar, and a cooking one when you want the cheese to be the point. Serve it at room temperature with Peter's Yard Original Sourdough Crackers and a spoon of Tracklements Spiced Plum Chutney, or grate it over a cauliflower cheese. A ploughman's with Tracklements Perfect Ploughman's Pickle and a pint of ale is the obvious lunch.

A 150g piece, sent chilled. Keep it wrapped in the fridge and take it out an hour before eating. Contains milk.
