Northern Pasta Co. British Spelt Fusilli

A 450g bag of spelt fusilli from Northern Pasta Co., made just outside Kendal, Cumbria, by pushing the dough through bronze dies and drying it slowly at low temperature.

Two ingredients: spelt flour and wheat semolina, plus water. The spelt is regeneratively grown in the UK and bought from UK millers, and the maker describes the result as a nutty flavour and a comforting mouthful. The bronze die leaves the surface rough, which is why sauce clings to it, and the slow drying keeps the bite. It cooks to a firm al dente and holds its spiral shape in the pan.

Boil it in plenty of well-salted water and taste it before the time on the bag is up. Because the spelt has flavour of its own, keep the sauce simple: a tomato sauce built on Very Lazy Chopped Garlic, brown butter with sage, or a drizzle of TruffleHunter English Black Truffle Oil with grated Quicke's Mature Clothbound Cheddar. Fusilli also holds a pesto or a cold pasta salad well.
