Miller's Fire Smokes Flour & Red Hot Chilli Crackers 100g

A cracker made with oak-smoked malt flour and crushed red chillies, hand-baked by Miller's at a family bakery in Ashbourne in Derbyshire, using bronze rollers and tools that are more than eighty years old.

Wheat flour and 26% stoneground wholemeal are mixed with corn oil, 4% oak-smoked dark malt flour, autolysed yeast, salt, dark muscovado sugar and 1% crushed red chillies. The baker's own line is that oak-smoked flour and red hot chilli make a cracker that more than lives up to its name. The smoke comes first, dark and slightly sweet from the muscovado and the roasted malt, and the chilli follows as a warmth that builds across a few bites rather than a single sting.

This is a cracker for cheese with some weight to it. Try it with a smoked cheddar such as Quicke's Oak Smoked Clothbound Cheddar, a strong blue like Long Clawson Blue Stilton, or a punchy cold meat. A spoonful of Tracklements Fresh Chilli Jam on top doubles down on the heat, while a mild soft cheese cools it off. It also makes a good base for a slice of chorizo or a piece of smoked mackerel.

A 100g box. Contains gluten from wheat and barley, and the bakery says its products are not suitable for nut allergy sufferers. No artificial additives or preservatives, according to the baker. Contains no animal products according to the ingredient list.
