Quicke's Oak Smoked Clothbound Cheddar 150g

A clothbound cheddar smoked over oak, made by Quicke's at Home Farm, Newton St Cyres in Devon, from the farm's own milk. The maker hand-selects mature cheddar, typically nine to twelve months old, and smokes it over oak chips from trees grown on the estate.

The maker's description is a sensuously smoky taste followed by creaminess, and a smoky, buttery flavour. Because the cheese is smoked whole rather than flavoured, the smoke sits in the rind and eases into the paste, so the buttery cheddar underneath still comes through. It is made with pasteurised milk, Cornish sea salt, starter culture and animal rennet, and is not suitable for vegetarians.

Smoked cheddar earns its place in cooking as much as on a board. Melt it over a burger or into a baked potato, add it to a leek and potato soup, or serve slices with Miller's Ale Crackers and Stokes Classic English Mustard. On a cheeseboard it goes at the end of the run, after the plain cheddars.

A 150g piece, sent chilled. Keep it wrapped in the fridge and bring it to room temperature before serving. Contains milk.
