A 220g wedge of Blue Stilton from Long Clawson Dairy in the village of Long Clawson, in the Vale of Belvoir in Leicestershire, a co-operative of local dairy farms founded in 1912 where the Stilton is hand-turned and hand-graded. Stilton is a protected name, and Leicestershire is one of the three counties allowed to make it.
The dairy describes it as creamy and a touch crumbly, with threads of distinctive savoury blue veining throughout, and calls it a pure expression of the milk from their partner farms. Stilton is not pressed, which is why the paste stays open and soft, and the blue develops after the cheeses are pierced at a few weeks old. Expect a mellow, buttery blue with a salty, savoury finish rather than a sharp one. Take the wedge out of the fridge an hour before serving. It is the classic cheese for the end of a meal with a glass of port, a few Miller's Three Fruit Crackers and a spoon of Rosebud Preserves Quince Jelly.
