Tracklements Fresh Chilli Jam

Tracklements Fresh Chilli Jam is a sticky, sweet chilli preserve that Tracklements make at Easton Grey near Malmesbury in Wiltshire with fistfuls of fresh red chillies. The producer says it smoulders with a gentle heat rather than a fierce one.

Red peppers make up 40% of the jar and red chillies 9%, cooked with raw cane sugar, cider vinegar, onions, lemon juice, garlic puree and sea salt until thick. The peppers give it body and a deep red colour, the sugar makes it glossy and sweet, and the chilli builds slowly behind that sweetness. The vinegar and lemon keep it from being cloying. It has won Great Taste and Taste of the West awards across several years and was picked as an Evening Standard top pick.

The producer suggests it with fish, meats, sandwiches and creamy cheeses. Spread it in a bacon sandwich, spoon it over a wedge of brie or a soft goats' cheese, or serve it with prawns, fishcakes or grilled halloumi. It also works as a dipping sauce for spring rolls and brushed over chicken wings before they go in the oven.

The jar holds 210g. There are no major allergens declared. Refrigerate once opened.
