A savoury cracker for cheese made with brown ale, hops and malted grain, hand-baked by Miller's at a family bakery in Ashbourne in Derbyshire that has been going for more than a hundred years and still sifts and weighs its ingredients by hand.
The dough is wheat flour and 26% stoneground wholemeal, mixed with brown ale, crushed malted barley and wheat, crushed crystal malt, malt extract, a little soft brown sugar, salt, autolysed yeast and hops. The baker describes it as made with hops, roasted wheat, barley and malt, a deeply savoury cracker for cheese, and that is exactly how it eats: dark, toasty and malty, with a faint bitterness from the hops that reads like the last mouthful of a pint.
That bitterness is what makes it a good cracker for strong cheese. It stands up to a mature cheddar such as Quicke's Mature Clothbound Cheddar, a crumbly blue like Butlers Blacksticks Blue, and the sort of washed-rind cheese that would flatten a water biscuit. Add a spoonful of Mrs Darlington's Real Ale Chutney and you have a ploughman's on a plate. It also holds a slice of ham or a smear of pâté without breaking.
