Butlers Blacksticks Blue Cheese 500g

A creamy, amber-coloured blue cheese from Lancashire, sold here as a whole 500g truckle. Butlers Farmhouse Cheeses, fourth-generation family cheesemakers at Inglewhite in Lancashire, make it by hand: milk from their own herd and neighbouring farms arrives each morning, is pasteurised on site, goes into open vats, and the curd is poured into individual moulds, turned by hand and matured under the eye of their graders.

It is made with pasteurised cow's milk, microbial rennet and a mould culture, and coloured with annatto, which gives the orange paste and, the maker says, a subtle flavour of its own. They describe it as creamy, smooth, with just enough blue bite to get your tongue tingling: quite mild up front, with an intensity you taste at the back. Suitable for vegetarians.

Put the whole truckle on the board with Miller's Three Fruit Crackers and Rosebud Preserves Quince Jelly; the maker pairs it with sweet or sharp flavours for contrast. It melts well, so crumble it over a steak, into a leek and potato soup, or onto a pear and walnut salad, and it is good in a sandwich with Tracklements Sticky Fig Relish.
