Free and Easy Breakfast Pancake Mix 230g

A pancake mix built on a gluten free flour blend and buckwheat, from Free and Easy, a free-from baking brand whose mixes are made to a short ingredient list and sweetened with coconut blossom sugar. The producer's own site could not be found, so this is written from the pack.

The mix is a gluten free plain flour of rice, potato, tapioca, maize and buckwheat, with a further 21% buckwheat flour, coconut blossom sugar, chickpea flour and a raising agent. Buckwheat gives the pancakes a nutty, slightly earthy flavour and a darker colour than a plain white mix; the chickpea flour adds body, and the coconut blossom sugar a mild caramel sweetness. There is nothing from animals in the list and no allergens are declared.

Whisk it up with your liquid of choice and cook on a medium heat until bubbles rise, then flip. Stack them with a drizzle of The London Honey Co. Cotswold Honey or a spoon of Single Variety Co. Majestic Raspberry Preserve, or go savoury with crumbled goats' cheese and a spoon of Tracklements Fresh Chilli Jam. A batch on Shrove Tuesday covers a table with mixed diets.
