A single-origin honey from hives in the Cotswolds, jarred by The London Honey Co. at Bermondsey in London, in Greater London, a beekeeping company that has kept its own bees since 1999 and sells its honey unpasteurised and minimally filtered rather than heated and blended. The company's own line is produced with our bees and our own hands, nothing more, nothing less.
The only ingredient is honey. The hives stand in the grassland meadows of the upper River Thames, where the Cotswold hills rise around them, and the honey celebrates the diversity of that local flora. The producer calls it bright and golden with complex undertones, the colour of the local stone on a warm summer day. Raw and unpasteurised, minimally filtered to keep the qualities of unprocessed honey, and never blended.
The producer suggests it with seasonal fruit and yoghurt, on warm oats or toast, in a dressing, or to sweeten herbal tea or a cocktail. It is also a cheeseboard honey: drizzle it over a slice of Oxford Blue Creamy Blue Cheese or a young goat's cheese such as Rosary Natural Goat's Cheese Log, and put it on the table with Kent & Fraser Cranberry & Almond Toast 110g. Whisk it with lemon and olive oil for a salad dressing, or spoon it over roasted figs.
A 250g jar. No major allergens declared. Honey only, so suitable for vegetarians. Raw honey may crystallise over time; stand the jar in warm water to loosen it.
