Single Variety Co.

Nicola Elliott started Single Variety Co in 2016, making jam in her kitchen at home in London and selling it at farmers' markets. Since 2021 she and her husband Ross have made everything in their own jam factory in Bristol. Each preserve uses one variety of fruit or chilli, with more fruit and less sugar than a traditional jam.
