A 225g jar of jalapeño chilli jam, made in a small jam factory in Bristol by Single Variety Co. Twenty-eight grams of jalapeños per hundred — properly loaded — softened with apple cider vinegar, sugar, and natural pectin. Four ingredients. That's all.

Nicola Brown started Single Variety on her kitchen table in London in 2016, with a stubborn idea: most chilli jams hide their chilli behind blends and sugar. Use one variety, use enough of it, and the flavour speaks for itself. Each Single Variety product showcases exactly what it says — the colour, the aroma, the heat of one chilli, working alone.

The result is hot, but not too hot. Sweet, but not cloying. The jalapeño is recognisable rather than buried — green, faintly grassy, with a slow build of warmth that fades cleanly.

For cheese on toast, a sharp cheddar burger, scrambled eggs, a charcuterie board, or stirred into mayonnaise for a quick aioli that does most of the work. Equally good with a hard-boiled egg, which is a stranger combination than it sounds.
