Single Variety Co. Fireflame Chilli Jam

A 225g jar of mild chilli jam made from one chilli variety, the Fireflame, by Single Variety Co. at their small jam factory in Bristol, where the chillies are prepped by hand before they go into the pan. Nicola Elliott started the company in 2016; single-variety fruit and chillies with less sugar than usual have been the approach ever since.

Four ingredients: sugar, Fireflame chillies, cider vinegar and natural pectin. The chilli content is 32g per 100g, and there is no tomato, pepper or other filler bulking it out, which is why the maker says it is absolutely full of flavour. The Fireflame is a sweet, mild red chilli, so this is the gentle end of the range: warmth rather than fire, a sticky glossy set, and a sharp edge from the vinegar. It won Gold at the Taste of the West awards.

The maker suggests it as a marinade for prawns or chicken, with salmon and couscous, and in a cheese toastie. It is also the chilli jam for a cheeseboard: spoon it beside a wedge of Quicke's Mature Clothbound Cheddar with a stack of Peter's Yard Original Sourdough Crackers, or fold a spoonful through cream cheese for a quick dip.

Cheese is cut fresh to order and sent chilled, dispatched every Monday and Wednesday. Everything in your order ships together in one insulated box, arriving the next day.

If your order arrives damaged, faulty, missing an item, or not as described, contact us within 48 hours of delivery with your order number and clear photos of the packaging and the affected item. Please keep all packaging until we've reviewed the issue.
