Single Variety Co. Sonata Strawberry Preserve

A 225g jar of strawberry preserve made from one strawberry variety, the Sonata, by Single Variety Co. in small batches at their jam factory in Bristol. Using a single variety is the whole idea of the company, started by Nicola Elliott in 2016: one fruit, chosen for its flavour, with less sugar than a traditional jam so the fruit leads.

The ingredients are strawberries, sugar, lemon juice and natural pectin, and nothing else. Fruit makes up 61g of every 100g, sugar 47g. The maker describes it as bright and fruity with a loose set, which is a polite way of saying it is closer to fruit than to jelly: whole soft strawberries in a syrup that runs off the spoon rather than a stiff block.

The maker's suggestions are yoghurt, scones, toast and croissants, plus ice cream and waffles. It is the strawberry jam for a cream tea, and the loose set means it also stirs well through porridge or spoons cleanly over a bowl of vanilla ice cream. Have it on a plate of Kent & Fraser Lemon Butter Shortbread, or in the same breakfast spread as the Majestic Raspberry Preserve for a red-fruit pair.
