Single Variety Co. Lemon Drop Chilli Jam

A 225g jar of super-hot chilli jam made from one chilli, the Lemon Drop, by Single Variety Co. in small batches at their jam factory in Bristol, where the chillies arrive direct from the grower and are prepped by hand. It is the hottest jar in a range that Nicola Elliott started from her kitchen in 2016.

Four ingredients: sugar, Lemon Drop chillies, cider vinegar and natural pectin, with 27g of chilli in every 100g. The maker describes the Lemon Drop as a fresh and fiery chilli with a lemony flavour, and the jam as heat balanced with a lingering sweetness. The citrus note is real, not added: it is the character of the chilli itself. This is a jar for people who like heat; the maker suggests those who do not should use it sparingly.

The maker pairs it with chicken, cheese and fish, and singles out burgers, cheese toasties and sourdough. It is at its best against something rich and mild: a spoonful beside Quicke's Buttery Clothbound Cheddar, or melted over grilled halloumi. A teaspoon stirred into mayonnaise makes a hot dip for chips, and a scrape on Peter's Yard Sea Salt Sourdough Flatbreads is an easy snack.

Cheese is cut fresh to order and sent chilled, dispatched every Monday and Wednesday. Everything in your order ships together in one insulated box, arriving the next day.
