Three packs of biscuits for cheese in one box from West Country Legends in Glastonbury, Somerset: Original Cocktail Water Biscuits, Farmhouse Cheddar Cheese Straws and Dorset Red Wafers, 280g in all.
The water biscuits are the plain, thin, crisp kind, made with wheat flour, rapeseed oil and a little skimmed milk powder. The cheese straws are 27.8% West Country farmhouse cheddar with butter, mustard powder and garlic in a flaky pastry. The wafers are made with 21.8% Dorset Red, a smoked cheese from Dorset, and the same mustard and cheese powder. The maker's line is that they are made to stand beside the cheese, and the three cover the range: a neutral biscuit, a rich one and a smoky one.
Put the water biscuits with a soft cheese or a blue such as Long Clawson Blue Stilton, the wafers with a wedge of Wookey Hole Cave Aged Cheddar, and eat the cheese straws on their own with a drink. Add a jar from the Classic Chutney Selection and the cheeseboard is done.
