A hand-cut piece of heather honeycomb standing in a tall jar of clear honey, made by The London Honey Co. of Bermondsey in Greater London. Steve Benbow started the company in 1999 with hives on a roof near Tower Bridge.
Two honeys go into the jar. The comb is what the producer calls its British Heather Honeycomb, cut by hand from the frame. It is suspended in acacia honey, which is clear, so the comb shows through the glass. The producer names the comb as British and does not give an origin for the acacia honey. The whole comb can be eaten, wax included.
The producer suggests it with a cheeseboard, with breakfast yoghurt and seasonal fruit, or as the centrepiece of a table. Lift out a piece of comb and put it on a slice of Wookey Hole Cave Aged Cheddar or Long Clawson Blue Stilton, with a Miller's Damsel Buttermilk Wafer underneath. Once the comb is gone, the honey left in the jar is for toast.
350g glass jar. No major allergens declared. Honey can crystallise; stand the jar in warm water to loosen it. Not suitable for babies under twelve months, as with all honey.
