Rosary Natural Goat's Cheese Log

A fresh, soft goat's cheese log with no coating, 275g. Rosary make it in Landford, Wiltshire, at a small family dairy behind the house on the edge of the New Forest, from pasteurised goat's milk (98.6%) with salt, starter culture and microbial rennet.

Four ingredients, and the milk does the talking. The producer describes its fresh cheeses as having a fresh taste and natural tang with a mousse-like texture, and this plain log is the purest version of that: white, clean and gently lemony, soft enough to spread on bread straight from the fridge, with a little goat character and no rind to speak of. If someone thinks they do not like goat's cheese, this is the one to try first.

Spread it on Peter's Yard Sea Salt Sourdough Flatbreads with a drizzle of Black Bee Honey Raw British Hot Honey, crumble it into a salad with roasted beetroot, or stir it through hot pasta with peas and lemon. On a cheeseboard it sits well beside something stronger such as Oxford Blue.
