The London Honey Co. Borage & Ling Heather Honey Duo 2 x 250g

Two 250g jars of single-flower honey sold as a pair, made by The London Honey Co. of Bermondsey in Greater London. Steve Benbow started the company in 1999 with hives on a roof near Tower Bridge, and its honeys are unpasteurised, minimally filtered and never blended.

The two are about as different as honey gets. Borage Honey comes from hives in Essex. Borage is the blue starflower that ends up in a glass of Pimm's, and the producer describes its honey as unusually clear and delicate tasting. Ling Heather Honey is a rich amber, strong and aromatic, and the producer's catalogue places it on the Lancashire moors. It has a jelly-like set that marks it out from other honeys, and the producer describes bitter-sweet notes with flavours of caramel and stone fruit.

Use the borage where you want sweetness without much else: in herbal tea, in a lemon dressing, or beside a mild cheese such as Bath Soft Cheese. The heather wants something stronger. The producer suggests it with cheddar, so try it on Quicke's Mature Clothbound Cheddar, or over plain yoghurt and fruit. For three smaller jars to taste, see the Trio.

Two 250g glass jars, 500g in total. No major allergens declared. Raw honey can crystallise; stand the jar in warm water to loosen it. Not suitable for babies under twelve months, as with all honey.

If your order arrives damaged, faulty, missing an item, or not as described, contact us within 48 hours of delivery with your order number and clear photos of the packaging and the affected item. Please keep all packaging until we've reviewed the issue.
