Bath Soft Cheese Organic Soft Cheese 250g

A soft, bloomy-rinded cheese made by hand at Park Farm in Kelston, Somerset, by the Bath Soft Cheese Company, from the milk of their own small herd of mainly Holstein Friesian cows. It is wrapped in parchment and sealed with red wax, a presentation the maker says goes back to the 1700s.

The maker describes it as soft and creamy under a white bloomy rind: slightly chalky in the centre when young, then gooey and spreadable beneath the rind as it ripens. The smell is earthy and mushroomy, with hay and warm milk. On the palate it opens with lemony brightness and a gentle tang, then deepens into mushroom and a savoury, broth-like note as it ages. It is sent out at around four weeks old, so what you get depends a little on how long you wait.

Bring it to room temperature before serving; cold, it is tight and mild, and warm it turns spoonable. Put it on a board with Peter's Yard Original Sourdough Crackers and a little Rosebud Preserves Quince Jelly, or bake the whole cheese in its box with a sprig of thyme and dip bread into it. A glass of Lyme Bay Winery Chardonnay suits it.
