The London Honey Company began in 1999 with a few hives on a rooftop near Tower Bridge, and now hold a Royal Warrant. This is their borage honey — single-origin, from hives among the borage fields of Essex. Borage, or starflower, is the blue bloom traditionally floated in a glass of Pimm's.

The honey is unusually pale and clear, with a delicate, almost green floral note — a world away from a supermarket squeezy bottle. Unpasteurised and minimally filtered, never blended. Good in herbal teas, over yoghurt, or alongside cheese. Net weight 250g.
