The London Honey Co Borage Honey

A 250g jar of borage honey from The London Honey Co. of Bermondsey in Greater London, the company Steve Benbow began in 1999 with hives on a roof near Tower Bridge, which produces single-origin honeys that are unpasteurised and minimally filtered.

Borage, also called starflower, is the blue-flowered crop whose blooms end up floating in a glass of Pimm's. The hives for this honey sit among the borage fields of Essex, and the producer describes the result as unusually clear, delicate tasting and really rather incredible, with a light floral taste that recalls a summer garden. It is pale, almost water-white when fresh, and much lighter in flavour than a wildflower or heather honey. The jar contains pure raw borage honey and nothing else.

The producer suggests it in herbal teas, on a cheese and charcuterie board, and in a seasonal salad dressing. Its lightness makes it a good match for a mild cheese rather than a strong one: try it beside the Bath Soft Cheese or the Cricket St Thomas Capricorn Goat's Cheese, and whisk a spoon into a lemon dressing for a green salad. It also sweetens a cup of the Tregothnan Chamomile without shouting over it.

250g glass jar. Raw honey can crystallise; warm the jar gently to loosen it. Not suitable for babies under twelve months.
