Whole chamomile flowers, stalk left on, grown and packed by Tregothnan on their estate at Tresillian, near Truro in Cornwall, and sealed in fifteen silken cornstarch pyramids. Leaving the stalk on is the estate's choice: they say it adds complexity to the flavour, and it means the pyramid holds recognisable flowers rather than dust.
It brews to a golden yellow cup with what the estate describes as a sweet, earthy, apple-like taste and aroma. That apple note is the mark of good chamomile, and the whole flowers give a rounder, gentler infusion than the ground flowers in most teabags. One ingredient, nothing added, and naturally caffeine-free.
Infuse one pyramid for four to five minutes, at least four, and serve without milk. A little honey suits it if you want sweetness. This is the evening cup: the last thing before bed, or the pot to put on when guests are staying up talking. It pairs well with something plain and buttery, a Farmhouse Biscuits Oat Flip or two, and it sits happily beside the Peppermint Loose Leaf Tea Pyramids in the caddy for anyone who prefers mint after dinner.
Fifteen pyramids to a box. The pouches are made from cornstarch, plastic-free and compostable. No allergens declared, and suitable for vegetarians and vegans.
