Cricket St Thomas Capricorn Goat's Cheese 100g

A small soft goat's cheese drum, mild, clean and slightly nutty. Lubborn Creamery at Cricket St Thomas, Somerset, has made soft mould-ripened cheeses for over forty years, and makes Capricorn from goat's milk collected from local farms.

The maker describes a particularly mild, clean and slightly nutty flavour, and says the cheese can be enjoyed at different stages: firm and crumbly when young, softening as it ages. So a fresh drum eats clean and crumbly, while one left a week or two in the fridge softens through and the nuttiness comes forward. The maker lists it as suitable for vegetarians and Vegetarian Society approved.

Serve it whole at room temperature with Rosebud Preserves Quince Jelly and a few slices of Kent & Fraser Cranberry & Almond Toast. Or slice it into rounds, grill them until they blister and drop them onto a beetroot and walnut salad. A drizzle of honey and a few thyme leaves over a grilled slice make a starter with very little work.
