The Garlic Farm Garlic Puree

A 110g tube of garlic puree that is 95% fresh garlic, loosened with water and extra virgin olive oil. It comes from The Garlic Farm at Newchurch on the Isle of Wight, where the Boswell family have grown garlic for more than fifty years, since Granny Norah planted the first cloves in her garden.

Five ingredients: fresh garlic, water, extra virgin olive oil, citric acid and xanthan gum to hold it together. There is no peeling, chopping or crushing to do, just open the tube and squeeze. The producer points out that garlic this fine cooks much faster than chopped or sliced cloves, so add it late to a hot pan to avoid catching it, or stir it into anything cold.

The producer suggests squeezing it into marinades, mayonnaise, dips, sauces, stews, flavoured butters and bread. Use it for a quick weeknight pasta, a garlic butter for steak, or a dressing shaken up with Aspall White Wine Vinegar. It also does the base work in a curry alongside Very Lazy Chopped Ginger and Very Lazy Chopped Red Chillies.
