From the Chevallier family's estate in Aspall, Suffolk, a name associated with quality fermentation since 1728. Where their red wine vinegar has depth and richness, this white wine version is brighter and more delicate, with the kind of clean acidity that serious cooks reach for instinctively.

It belongs in a béarnaise, in salad dressings where colour matters, in light pickles that should taste of the vegetable rather than the preservation. The acidity is precise rather than aggressive, sharp enough to do the job, restrained enough not to dominate.
