Aspall White Wine Vinegar 350ml

A 350ml bottle of organic white wine vinegar from Aspall, made at the Cyder House on the Chevallier family estate near Debenham in Suffolk, where they have made cyder since 1728 and now ferment vinegar by turning alcohol into acetic acid with bacteria. The wine comes from Spanish grapes; the vinegar is made and bottled in Suffolk.

Two ingredients: organic white wine vinegar and water. The makers' word for it is zingy, and next to their red wine vinegar it is the lighter, cleaner one, with a bright acidity and none of the darker fruit. It won a Great Taste star in 2023. Vegan and naturally gluten-free.

The makers suggest a dash in chicken stock, a homemade hollandaise, layers of flavour on roast vegetables, or a spritz over salmon to serve. It is the vinegar for pale dressings where you do not want colour, for a beurre blanc, and for quick pickles of cucumber or shallot that should still taste of the vegetable. Whisk it with TruffleHunter English Black Truffle Oil for a dressing over warm potatoes, or use it to sharpen a mayonnaise made with Very Lazy Chopped Garlic.
