Very Lazy Chopped Ginger 190g

Chopped ginger in white wine vinegar, ready to spoon, made by Very Lazy of Newbury in Berkshire so that the peeling and grating is done before the jar reaches you. Ginger is one of the worst roots to prepare on a busy evening, which is why this exists.

Two ingredients: white wine vinegar and ginger. The maker describes it as the no-faff option, and puts the measure at one teaspoon to one small thumb of ginger. The vinegar preserves the ginger and lends a slight sharpness that cooks off in the pan, leaving the warm, peppery flavour of the root. It is vegan.

Use it wherever a recipe calls for fresh ginger. Stir a teaspoon into the base of a curry with the onions, add it to a stir-fry with Very Lazy Chopped Garlic, or whisk it into a marinade for chicken with soy and honey. It is also useful in baking: a spoon in a gingerbread mix or a rhubarb crumble does the job of grated root. A little in hot water with lemon makes a plain ginger tea.
