The Garlic Farm Garlic & Chilli Mayonnaise 240g

A 240g jar of garlic mayonnaise with chipotle chilli, made for The Garlic Farm of Newchurch, Isle of Wight, where the Boswell family have grown garlic since Granny Norah planted her first cloves more than fifty years ago. The family grow as much as they can on the farm and work with specialist producers to make the mayonnaise.

Rapeseed oil (67%) and free range pasteurised egg yolk (11%) make the base, with 6% chipotle chilli paste, white wine vinegar, 2% garlic puree, Dijon mustard, tomato paste, lemon juice, red chilli and toasted garlic. The producer calls it their classic garlic mayo with a bit of bite, and that is fair: the chipotle brings smoke and a moderate, lingering warmth rather than a scorch, and the toasted garlic keeps it savoury.

The producer suggests it as a dip, with sausages, or stirred into coleslaw. Spoon it over chips, spread it in a bacon sandwich or a fish finger sandwich, or put it out with Two Farmers Lightly Salted Hand-Cooked Crisps for dipping.
