Stokes Classic English Mustard 185g

A smooth, strong English mustard made with 38% mustard flour, mixed in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk, where the firm has made its condiments since 2004.

Mustard flour is blended with water, white wine vinegar, sugar, lemon juice, sea salt and a little spice, and nothing else. The producer describes it as a smooth and strong classic English mustard but without the burn, which is the point: the heat is clean and builds through the nose the way an English mustard should, but it does not scorch, and the lemon juice and wine vinegar keep it bright rather than harsh.

The producer suggests spreading it on pastry for pies and sausage rolls, on ham sandwiches, with scotch eggs, stirred into a cheese scone mix to sharpen the cheese, or added to stews and casseroles. It is the mustard for a roast beef sandwich, a pork pie, or a ham hock. Set it out with Drivers 1906 Pickled Onions and a wedge of Quicke's Mature Clothbound Cheddar for a ploughman's, or alongside the Otter Vale Devon Farmhouse Cider Mustard if you like a grainier style.
