Otter Vale Devon Farmhouse Cider Mustard 90g

A 90g jar of cider mustard from Otter Vale in Ottery St Mary, Devon, a family firm that cooks its preserves and mustards in gas-fired pots and still pours many of its jars by hand, filling them hot.

Four ingredients: cider vinegar, mustard seed, cider and honey. The seed gives the heat and the texture, the cider vinegar the sharpness, the cider a fruit note behind it, and the honey takes the edge off, so it sits at the milder end of the mustard shelf. It is a small jar, the size that suits a cheeseboard, a picnic basket or a hamper rather than the back of the fridge door.

Use it where you would use any farmhouse mustard: with sausages and mash, on a ham sandwich, beside a pork pie or a slice of cold roast pork. It is the mustard to put on a cheeseboard next to Quicke's Devonshire Red Clothbound Cheddar, and a teaspoon whisked into a vinaigrette with cider vinegar and rapeseed oil dresses a potato salad. Anything from the cheese counter with a bit of age suits it.
