Stokes Bramley Apple Sauce 265g

A Bramley apple sauce with a dash of dry cider, cooked in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk, where the firm has made its sauces since 2004.

Bramley apples make up 51% of the jar, cooked with sugar and water, 5% dry cider, a little starch to hold it, and ascorbic acid to keep the colour. The producer describes it as a traditional sauce with a simple twist from the cider, and the Bramley brings the sharpness that variety is known for, so it tastes of apple rather than of sugar. Customers on the producer's site mention good-sized pieces of apple in the jar rather than a smooth purée.

Roast pork is where the producer says it is a firm favourite, and a spoonful beside crackling or a pork chop is the classic use. Try it with sausages and mash, or inside a pork and stuffing sandwich the day after. The producer also suggests a generous scoop over good vanilla ice cream with a small measure of Calvados. On a roast dinner table it pairs with their Mint Sauce and Creamed Horseradish, and a wedge of Quicke's Devonshire Red Clothbound Cheddar goes with it on a cheeseboard.
