Stokes Mint Sauce 250g

A mint sauce that is 16% mint, made in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk, a firm that has cooked its sauces there since 2004.

White wine vinegar makes up 41% of the jar and unrefined raw cane sugar 27%, with the mint, a little cornflour to hold it together, sea salt and chlorophyll for colour. The producer describes fragrant mint, white wine vinegar and unrefined raw cane sugar coming together as a simple take on the traditional accompaniment for lamb. The proportions tell you how it tastes: sharp from the vinegar, sweet enough to soften that edge, and with the herb clearly present rather than hinted at.

Roast lamb is the obvious home, and a spoonful beside a Sunday joint or a lamb chop cuts the richness cleanly. The producer also suggests blending it with real mayonnaise and stirring it through new potatoes, which is worth trying. Put it on the table with their Creamed Horseradish for a full roast, and keep a jar of Bramley Apple Sauce for the pork.
