Quicke's Devonshire Red Clothbound Cheddar 150g

A russet-coloured clothbound cheese made by Quicke's at Home Farm, Newton St Cyres in Devon, from the milk of their own grass-fed cows, and matured naturally for around six months. The maker describes it as their take on a classic Red Leicester rather than a straight cheddar, and the colour comes from annatto, a natural plant dye.

The maker's notes are a crumbly texture, fresh, nutty flavours and a lemony creaminess: a fresher cheese than a traditional cheddar, but one that keeps a nuttiness. It is made with pasteurised cow's milk, salt, annatto, starter culture and vegetarian rennet, so it is suitable for vegetarians. Six months gives it enough age to have some bite without losing the clean, milky character.

The colour makes it useful on a cheeseboard, and the flavour holds its own next to a mature cheddar. Eat it with Peter's Yard Sea Salt Sourdough Flatbreads and a spoon of Tracklements Caramelised Onion Marmalade, or grate it into a Welsh rarebit where the colour shows. It also makes a good cheese for a sandwich with a sharp pickle.

A 150g piece, sent chilled. Keep it wrapped in the fridge and take it out an hour before eating. Contains milk.
