Stokes Creamed Horseradish 200g

A creamed horseradish sauce made with 29% horseradish root and single cream, mixed in small batches by Stokes at the Old Stables kitchens of Rendlesham Hall in Rendlesham, Suffolk. It holds a Great Taste Award.

Grated horseradish root is blended with rapeseed oil, spirit vinegar, sugar, free-range pasteurised whole egg, 4% single cream, sea salt and mustard flour. The producer describes the root and the cream together giving flavour without aggressive heat. The Great Taste judges found a creamy texture with wonderful bits of grated horseradish giving a lovely mouthfeel, a horseradish bite that is not aggressive, and called it a really beautifully balanced horseradish. That is what you get: the sinus-clearing kick is there, but it arrives politely.

Roast beef is the obvious partner, and the producer says it pairs beautifully with it. Beyond that, it suggests mixing it into mashed potatoes, adding it to a dumpling mix, or stirring it into crème fraîche for a dip. Try it in a rare beef sandwich, with smoked mackerel, or beside a steak. It sits well on a roast table with their Mint Sauce, and a spoonful next to a slice of Mrs Kirkham's Clothbound Lancashire is a good lunch.

A 200g jar. Vegetarian and gluten free according to the producer. Contains milk, egg and mustard. Refrigerate once opened.
