St Jude Raw Milk Soft Cheese 95g

St Jude is a small lactic-style soft cheese of 95g with a wrinkled, mould-ripened rind and a smooth paste, made from raw cow's milk. St Jude Cheese, which is Julie Cheyney's dairy at Wheatacre on the edge of the Norfolk Broads, makes it by hand from milk that arrives from the neighbouring family farm and is worked within two hours of milking.

The only ingredient is unpasteurised cow's milk, plus the cultures and rennet used to set it. The producer describes a slow, gentle process: the milk ferments for up to 24 hours before the curd is ladled by hand into moulds. Young, it is fresh and creamy; with age it develops more complex flavours, leaning buttery in winter and towards vegetal, grassy notes when the cows are out at pasture. It is usually eaten between two and five weeks old.

Let it come to room temperature and eat it with a spoon, or on a plain cracker such as Peter's Yard Original Sourdough Crackers. It suits a glass of Lyme Bay Chardonnay and a bowl of ripe fruit, and it belongs on a board with a bigger cheese like Baron Bigod from the same county.
