Baron Bigod is a farmhouse Brie-style cheese made by hand by Fen Farm Dairy at Bungay in Suffolk, from the milk of the farm's own grass-fed Montbéliarde herd, a breed bought from the Jura for its cheesemaking milk. The milk is gravity fed from the milking parlour to the make room, and the cheese has been made on the farm since 2013.
The ingredient list is cow's milk, animal rennet, lactic cultures and salt, so it is not suitable for vegetarians. It is aged for up to eight weeks in a cave-like store, and the maker describes a nutty, mushroomy rind over a smooth, silky golden breakdown that oozes around a fresh, citrussy centre, with warm milky flavours and notes of mushroom, earth and farmyard. Sizes vary a little because each wheel is made by hand.
The maker's advice is to bring it to room temperature for half an hour to an hour before eating, when it goes gooey and the flavour opens up. Serve it as the centre of a cheeseboard with Rosebud Preserves Quince Jelly and Peter's Yard Sourdough Crackers, or bake a whole wheel with a drizzle of honey and dip crusty bread into it. A glass of Nyetimber Classic Cuvée alongside is a good match.
