Peter's Yard Original Sourdough Crackers

Thin, round sourdough crackers baked in small batches by Peter's Yard at Shrewsbury in Shropshire, where every batch begins with the bakery's own sourdough starter, left to ferment slowly for 16 hours before the dough is rolled thin and baked until crisp. A 90g box holds roughly 35 crackers.

The dough is a simple one: fresh milk, rye flour, Shipton Mill wheat flour, 12% rye sourdough, wholemeal flour, a little honey and salt. There are no artificial colours, flavours or preservatives and no palm oil, and the producer describes the crackers as high in fibre and low in sugar. What you get is a clean, crisp cracker with the mild character of rye and milk and only a faint sweetness from the honey, which is why it works with so many cheeses: it carries flavour rather than competing with it.

The producer's own advice is to savour the crunch with your favourite cheese, and they hold up under a firm one. Try a slice of Quicke's Mature Clothbound Cheddar with a spoon of Tracklements Spiced Plum Chutney, or lay a few out with a soft goat's cheese and a ripe Brie. They also suit smoked fish, pâté or a bowl of soup in place of bread, and the whole box sits happily among anything from the For the Cheeseboard collection.
