Rosebud Preserves Cherry & Amaretto Jam

Rosebud Preserves Cherry & Amaretto Jam is made in small batches at Rosebud Farm near Masham in North Yorkshire, in two nineteenth-century barns that the founder converted for preserving in 1989. The house rule is no additives, no preservatives and no added pectin: the set comes from the fruit alone, unrefined cane sugar and careful cooking.

Cherries make up 93% of the jar, sweet and sour varieties together, with unrefined cane sugar, Bramley apples, lemon juice, Amaretto at 2% and a little almond extract. The producer describes it as a blend of sweet and sour cherries enriched with the bitter-sweet notes of almond liqueur. The Bramley apple and lemon juice are there for the natural set and the sharpness, and the almond runs through the whole jar without taking it over.

Competition judges quoted by the producer said it would be wonderful in a cherry Bakewell tart, and it also goes on scones with clotted cream or over a baked cheesecake. On a cheeseboard, it is very good against a soft cheese: try it with St Jude Raw Milk Soft Cheese or a slice of Golden Cross Ash Goat's Cheese Log, with plain crackers.
