Golden Cross Ash Goat's Cheese Log 225g

Golden Cross is a mould-ripened goat's milk log made by Golden Cross Cheese at Whitesmith in East Sussex, where the firm has made soft goat's and sheep's milk cheeses since 1989 and milks its own herd for it. The goats are a mix of Saanen, Toggenburg and Alpine types, and they graze outside by day from spring to autumn.

The ingredient list is raw goat's milk, a lactic starter, microbial rennet, Penicillium and charcoal ash, so it is an unpasteurised cheese that suits vegetarians. The log is rolled in ash, and as the mould develops the surface wrinkles under a thin bloomy coat. Fresh, it is firm and lemony, the way lactic goat's cheeses are; with a few more weeks it softens under the rind and the flavour rounds out.

Bring it to room temperature before serving. It is a cheeseboard cheese first, and it likes a sweet, sharp partner: a spoonful of Rosebud Preserves Quince Jelly or Rosebud Preserves Cherry & Amaretto Jam, and a Peter's Yard Original Sourdough Cracker underneath. Sliced into rounds, it also grills on toast for a salad with beetroot and walnuts.
