Quiggin's Chocolate Covered Kendal Mint Cake

A bar of Kendal Mint Cake fully enrobed in plain chocolate, made by Quiggin's at Lowfellside in the centre of Kendal, Cumbria, where the sugar is still boiled in large open copper pans and each bar is hand poured. The firm dates to 1840 and has made mint cake in Kendal since the 1870s.

Mint cake is a set sugar tablet: sugar, glucose syrup and fondant boiled together with oil of peppermint and a pinch of salt, then poured and left to firm. Here it is coated in plain chocolate made from cocoa mass, sugar, cocoa butter and natural vanilla. The maker describes rich dark chocolate against the mint as a real taste experience, and says the chocolate version was developed about forty years ago. The mint is sharp, cold and sweet; the chocolate rounds it off and adds a little bitterness, so it eats more like an after-dinner mint than the plain bar does.

The maker says it is often eaten as an after-dinner mint and is popular with endurance athletes for the sugar. Put one in a rucksack for a long walk, break it over vanilla ice cream, or serve it with coffee after supper alongside a Cornish Coffee The Original Ground Coffee. It also drops neatly into a stocking or a hamper with a bag of Barney Jack's Mint Humbugs.
