Tracklements have made condiments by hand in Wiltshire since 1970, in small batches, the way you might at home. This is their Recipe No. 40 — a proper chunky ploughman's pickle, built on parsnip, carrot, courgette, turnip and onion, sweetened with treacly muscovado and given depth by dates and tamarind.

Crunchy, sweet-sharp and a little spiced — no better partner for a wedge of cheese, a ploughman's, or a thick-cut ham sandwich. Net weight 245g. Suitable for vegetarians and vegans.
