Miller's Earth Crackers 100g

A short, buttery cracker with beetroot and spinach, hand-baked by Miller's at a family bakery in Ashbourne in Derbyshire that has been going for more than a hundred years and still sifts and weighs its ingredients by hand. It is one of the Elements range, and this one is Earth.

The baker sourced potatoes to create a cracker base as friable as earth itself, with a texture that first crumbles then melts in the mouth, and added beetroot and spinach to give it an earthy sweetness. The dough is 35% oats and 26% butter with wheat flour, potato flakes and the vegetable flakes, and nothing else beyond salt and a little soya lecithin. The result is rich and tender, almost a shortbread, with flecks of colour and a faint sweetness from the beetroot.

Because it is buttery and soft, it suits gentler cheeses than a hard water biscuit does: a fresh goat's cheese, a young cheddar, a soft blue such as Butlers Blacksticks Blue, or a spoon of cream cheese with chives.
