Long Clawson Dairy
Cheese has been made in the Leicestershire village of Long Clawson since 1912, when Thomas Hoe Stevenson and eleven founding members started the dairy. Now called Clawson Farms, it takes milk from 30 member farms, all within 30 miles. It is one of five dairies allowed to make Blue Stilton, and each wheel is turned and graded by hand.
