Description

These are crunchy savoury cheese wafers with red chilli, piri-piri and chipotle, brought together with coriander and lime. Kent & Fraser bake them at Park Royal in Greater London, in a bakery that has worked only with gluten-free and wheat-free recipes since 2009.

The wafers are made from rice, potato, maize and tapioca flours with butter and 16% hard cheese, plus tomato paste, red chilli paste, garlic, lime and lemon juice, soured cream, sundried tomato, ground coriander, bird's eye piri-piri chilli and chipotle. The producer describes the blend as fragrant and a little bit fiery, so expect citrus and coriander first and a proper chilli warmth after.

They belong on a cheeseboard, where they cut through rich cheeses such as Godminster Black Truffle Cheddar or a wedge of Blacksticks Blue. They are also good with a cold beer, alongside pate, or eaten straight from the box while you cook. Anyone who likes heat can go further with a spoon of Tracklements Fresh Chilli Jam.

Cheese is cut fresh to order and sent chilled, dispatched every Monday and Wednesday. Everything in your order ships together in one insulated box, arriving the next day.
