Godminster Black Truffle Organic Cheddar 200g

Godminster Black Truffle Organic Cheddar is the maker's vintage organic cheddar blended with black truffle, made by Godminster at Bruton in Somerset from the milk of their own organic herd, which they run less intensively and give more pasture. The maker sells it as the Howling Hound, after the dog that hunts the truffles.

The ingredient list is vintage organic cheddar and a black truffle sauce that is 70% black truffle and 30% truffle oil. The maker describes the umami and aroma of the truffle against the smooth creaminess of its vintage cheddar, with flecks of truffle through the paste, and that is the whole idea: a rich, buttery cheddar with an earthy, savoury truffle note that you smell before you taste. The cheese is made with pasteurised milk, is certified organic by the Soil Association, and is suitable for vegetarians, all per the maker. It comes sealed in black wax.

The maker suggests bringing it to room temperature an hour before serving, and use it in a risotto, in a cheese toastie, or sliced onto a baguette for lunch. On a board, it wants plain crackers so the truffle is not fighting anything: Peter's Yard Original Sourdough Crackers do the job, with a glass of Lyme Bay Winery Pinot Noir. Grate the last of it over scrambled eggs.
