Free and Easy Coffee Cake Mix 350g

A gluten-free coffee cake mix made with natural coffee powder and coconut blossom sugar, from Free and Easy, the free-from range run by Healthy Food Brands of Billingshurst in West Sussex, who say the cake was created by popular request.

Coconut blossom sugar comes first on the list, then a gluten-free flour blend of rice, potato, tapioca, maize and buckwheat, natural coffee powder, raising agents, potato and tapioca starches and a little citric acid. The brand describes the cake as tasty and aromatic, and the coffee powder is real coffee rather than a flavouring, so the sponge smells of it as it bakes. The coconut blossom sugar gives a soft, toffee-edged sweetness that suits coffee better than plain white sugar would.

The mix makes two seven-inch sponges, two small loaves or a dozen cupcakes. Sandwich the sponges with a coffee buttercream, or with a dairy-free alternative to keep it vegan, and scatter walnuts on top if nobody at the table has a nut allergy. Serve it in the afternoon with a pot of Brew Tea Co. English Breakfast Tea Bags or a cup of Cornish Coffee Stupidly Strong Ground Coffee.
