Free and Easy Chocolate Brownie Mix 350g

A gluten-free brownie mix sweetened with coconut blossom sugar, from Free and Easy, the free-from range run by Healthy Food Brands of Billingshurst in West Sussex, who blend their mixes to be free of gluten, dairy, soya and nuts.

The mix is a gluten-free flour blend of rice, potato, tapioca, maize and buckwheat, with 21% buckwheat flour, coconut blossom sugar, chickpea flour and a raising agent. Coconut blossom sugar has a darker, more caramel flavour than white sugar, and buckwheat and chickpea flours give the crumb a nutty depth and a bit of structure that gluten-free bakes often lack. The brand describes the result as gooey, depending on cooking times, and says the mixes are made to be free of refined sugar.

You add oil, egg and milk, or oil and water for a vegan version, then bake it in a tray and cut it into squares. Eat them warm with vanilla ice cream, cold from a tin with a mug of Cornish Coffee The Original Ground Coffee, or take them into work. A pinch of Cornish Sea Salt Crystals over the top before baking is a good trick. Use the Free and Easy Coffee Cake Mix from the same range for the weekend after.
