Cornish Sea Salt Crystals 75g

A 75g pot of sea salt crystals, hand-harvested by Cornish Sea Salt at their salt house on the Lizard Peninsula in Cornwall, eight metres from the Atlantic water it comes from. The seawater is drawn from the protected Grade A waters off the Lizard, and the company describes reworking century-old techniques so that the crystals form in the right conditions before being harvested by hand.

One ingredient: sea salt. The maker says its mineral profile, with calcium, potassium and magnesium from the serpentine and gabbro rock of the Lizard, gives zing, zest and sweetness and more flavour with less salt. The crystals are crunchy, so on food they give texture and small pockets of saltiness rather than an even coating.

This is a finishing salt. Crush a pinch over roast vegetables, grilled meat or a tomato salad just before it goes to the table, or over good bread and butter. The maker also suggests it on chocolate brownies and salted caramel, and mixed with breadcrumbs, butter and herbs as a crust for fish. Keep it beside the Cornish Seaweed Pepper Seasoning for a Cornish pair, or use it to season a plate of Quicke's Devonshire Red Clothbound Cheddar and sliced apple.

The 75g pot is sized for the table or a picnic bag. No allergens declared; suitable for vegetarians and vegans. Keep the lid on and the pot dry.
